You’ve heard of spicy. Now meet its cooler, more complex cousin: Málà (麻辣). It’s the signature flavour of Sichuan cuisine, a combination of two words:

  • Má (麻): The tingling, vibrating, mouth-awakening sensation from Sichuan peppercorns.
  • Là (辣): The fiery, spicy heat from chilli peppers.
