METHOD
1. Make the sauce (if not using store-bought): In a small bowl, mix together the ketchup, Worcestershire sauce, soy sauce, and honey until smooth. Set aside.
2. Prepare the batter: In a large bowl, whisk together the flour, water, eggs, baking powder and salt until smooth. Fold in the shredded cabbage, spring onions and panko breadcrumbs until well combined.
3. Cook the pancakes: Heat a non-stick pan over medium heat and lightly grease with neutral oil. Pour one-third of the batter into the pan and spread into a round shape (about 2cm thick). Drizzle some crispy chilli oil over the top before flipping. Cook for 4-5 minutes until golden brown. Carefully flip and cook for another 4-5 minutes until golden and cooked through.
4. Transfer to a plate and drizzle with okonomiyaki sauce and chilli egg mayo. Garnish with pickled ginger, spring onions, and furikake (or bonito flakes).
Notes & Tips: Additions to Your Okonomiyaki
Pork Belly (Classic Style): Place thin slices of pork belly on top of the pancake before flipping. The fat renders as it cooks, making the edges extra crispy and flavoursome.
Bacon Strips: A great alternative to pork belly. Lay the bacon on the uncooked side before flipping, and let it crisp up as the pancake finishes cooking.
Prawns or Shrimp: Chop into small pieces and fold into the batter. Alternatively, place whole prawns on top before flipping.
Minced Chicken or Pork: Brown the meat separately with a little soy sauce and oil, then fold it into the batter.
