Honey Umami Glazed Christmas Ham
A dry, forgettable Christmas ham is a waste of everyone's time. This recipe for a Honey Umami Glazed Christmas Ham is the fix. It builds a ridiculously sticky glaze using sweet honey and the deep, savoury crunch of UmamiPapi Chilli Oil, creating a flavour-packed crust that makes this the only centrepiece worth talking about.
Honey Umami Glazed Christmas Ham

Ingredients

1kg leg of ham
3 tbsp UmamiPapi Chilli Oil
4 tbsp honey

METHOD

  1. Remove leg of ham from the fridge for at least an hour. 

  2. Preheat oven to 170 degrees Celsius. 

  3. Run a small knife around the bone handle of the ham and make incisions down each side of the ham. 

  4. Slice under the edge of the skin on one end of the ham and continue to slice upwards to eventually remove the skin. 

  5. Ensure to leave some fat on the leg so that it can render in the oven later. 

  6. Use aluminium foil to layer a deep baking tray. 

  7. Place the ham in the tray and add UmamiPapi Chilli Oil and honey. 

  8. Use a brush to coat all sides of the ham. 

  9. Place in the oven and remove after 15 minutes to reglaze using the sauces that have gathered at the bottom of the pan. Add back to the oven once finished. 

  10. After another 15 minutes, repeat the reglazing process. 

  11. After another 15 minutes, repeat the reglazing process but this time add another layer of honey. 

  12. At this point, the ham should have a much darker, deeper colour with the fat rendered. 

  13. Finish off the ham by glazing it again with the sauces at the bottom of the pan. 

  14. Slice with a carving knife and serve. 

  15. Enjoy!
