Hot Honey Pecan Pie

Hot Honey Pecan Pie

Ingredients

Tart Shell
185g plain flour, plus extra for dusting (or
1 sheet store-bought shortcrust pastry)
Pinch of salt
110g cold unsalted butter, cubed
60ml iced water
Filling
230g UmamiPapi Hot Honey
220g brown sugar
3 eggs
3 tbsp unsalted butter, melted
1 tbsp vanilla extract
¼ tsp salt
230g pecan halves
Serving
Vanilla ice cream, or thickened cream

METHOD

1. In a medium bowl, combine flour and salt. Add butter and rub in with fingertips until mixture resembles coarse crumbs. Gradually add iced water until the dough comes together. Shape into a disc, wrap in plastic, and chill for at least 1 hour (or up to 3 days). If using store-bought pastry, thaw before rolling.

2. Roll dough into a 30cm circle on a lightly floured surface. Grease a removable-base tart pan and gently press in the dough. Trim edges and prick base with a fork. Chill in the fridge while making the filling.

3. In a large bowl, whisk together hot honey, brown sugar, eggs, melted butter, vanilla, and salt until smooth. Stir in pecans, then pour into the chilled tart shell.

4. Bake at 180°C for 30-35 minutes, or until the centre is set. Cool at least 1 hour before slicing, then serve with vanilla ice cream or thickened cream.
