Spicy Crispy Chilli Tuna Bowls
Recipe by Made by Mandy. Cubed tuna in a Crispy Chilli Oil marinade, cucumber salad, spicy mayo, rice. Poke-bowl energy without the wait.
Spicy Crispy Chilli Tuna Bowls

Ingredients

150g short-grain rice
270ml water
2 tuna steaks, cut into 2cm cubes
Marinade
2 tbsp soy sauce
2 tbsp mirin
1 tbsp UmamiPapi Crispy Chilli Oil
2 tsp ginger, finely grated
2 tsp sesame seeds
1 tsp sesame oil
Cucumber Salad
2 Lebanese cucumbers
1 tbsp soy sauce
2 tsp rice wine vinegar
1 tsp UmamiPapi Crispy Chilli Oil
Spicy Mayonnaise
3 tbsp Japanese mayonnaise
1 tbsp UmamiPapi Crispy Chilli Oil
To serve
1 avocado
2 tbsp pickled ginger
2 tsp furikake
2 tsp sesame seeds
1 nori sheet, finely shredded

METHOD

1. In a saucepan over high heat, bring rice and water to a boil. Cover and reduce to low heat. Cook for 20 minutes, then turn off the heat and let the rice sit covered for 10 minutes to absorb excess liquid.

2. In a large bowl, combine the marinade ingredients. Add the chopped tuna and toss gently to coat, then set aside.

3. Roughly chop the cucumbers and place them in a bowl with the remaining cucumber salad ingredients. Toss gently to coat, then set aside.

4. For the spicy mayonnaise, combine the mayonnaise and crispy chilli oil in a small bowl and set aside.

5. To assemble, divide the steamed rice, marinated tuna, and cucumber salad between two bowls. Garnish with avocado, pickled ginger, furikake, sesame seeds, nori and a drizzle of the remaining tuna marinade.
