Spicy Peanut Noodles With Crispy Halloumi
Recipe by Made by Mandy. Peanut-chilli noodles and halloumi fried in UmamiPapi Crispy Chilli Oil. Fast, loud, and extremely moreish.
Spicy Peanut Noodles With Crispy Halloumi

Ingredients

1 tbsp UmamiPapi Crispy Chilli Oil
150g halloumi,cubed
250g noodles of choice (I used Udon)
Sauce
2 tbsp smooth peanut butter
1 tsp light soy sauce
1 tsp dark soy sauce
1 tbsp UmamiPapi Crispy Chilli Oil
1 tsp black vinegar (or rice wine vinegar)
To Serve (Optional)
2 spring onions, finely sliced
1 cucumber, sliced into matchsticks
2 tsp sesame seeds

METHOD

1. Heat 1 tablespoon of UmamiPapi's Crispy Chilli Oil in a frying pan over medium heat. Fry the halloumi for 4-5 minutes, or until golden and crispy all over. Remove from the pan and set aside.

2. Bring a pot of water to a boil and cook the noodles according to package directions.

3. While the noodles cook, combine all sauce ingredients in a bowl and mix well. Transfer to the pan used to fry the halloumi. Add about ½ cup of cooking water from the noodles to thin out the sauce. Transfer the cooked noodles to the pan and toss well to coat.

4. Divide the noodles between bowls and top with the crispy halloumi, spring onions, cucumber, sesame seeds and another drizzle of UmamiPapi's Crispy Chilli Oil.
