Stir Fried Umami Green Beans

Stir Fried Umami Green Beans
This is the only way green beans should be cooked. We flash-fry them on high heat until they’re blistered and smoky, but still have a proper crunch. Tossed with a criminal amount of garlic, whole dried chillies, and a slick of soy, these Stir Fried Umami Green Beans are simple but seriously effective.
Stir Fried Umami Green Beans

Ingredients

200g green beans
5 cloves garlic
5 whole dried chillies
1 tbsp light soy sauce
1/2 tsp dark soy sauce
1 tsp white sugar
2 tbsp UmamiPapi Chilli Oil

METHOD

  1. Dice the garlic into small pieces.
  2. Chop the ends of the green beans. 
  3. Bring a pot to boil and steam the green beans for 2 minutes. 
  4. Prepare sauce by combining the light soy sauce, dark soy sauce, sugar and UmamiPapi Chilli Oil into a bowl and mix through, 
  5. Bring the wok or pan to high heat and add cooking oil and the steamed green beans. 
  6. Once browned, add the garlic and dried chillies and continue to stir to prevent the garlic and chilli from burning. 
  7. After the garlic becomes fragrant and chillies become bright red, add the sauce and ensure all the beans are coated. 
  8. Serve with steamed rice and enjoy!
