Umami & Prawn Cucumber Boats
Sad desk lunches are officially banned. These Umami & Prawn Cucumber Boats are how you get a proper feed. Think cool, crunchy cucumber vessels, loaded with a creamy prawn, basil, and chive filling that actually tastes like something. A sharp hit of lime keeps it fresh before a fat drizzle of UmamiPapi brings it home.
Umami & Prawn Cucumber Boats

Ingredients

12 cooked prawns
1 continental cucumber
1 handful fresh basil
1 handful fresh chives
4 tbsp good quality mayonaise
4 tbsp UmamiPapi Chilli Oil
1 pinch salt
1 pinch pepper
1 lime

METHOD

  1. To prepare your prawns, remove head, tale and devein your prawns and wash them under water so they’re all nice and clean.
  2. Once done, roughly chop your prawns and pop them into a clean bowl.
  3. Finley chop your chives and add them to the bowl with your prawns.
  4. Pick and roughly chop your basil then add to your bowl with your prawns and chives.
  5. Add mayonnaise into your bowl.
  6. Add 2 tablespoons of UmamiPapi Chilli Oil into your bowl.
  7. Squeeze in your fresh lime.
  8. Season with salt and pepper.
  9. Mix to combine then pop in the fridge until serving.
  10. To prepare your cucumber, cut your cucumber in half then half the cucumber longways so you’re left with 4 long cucumber boats.
  11. With a teaspoon, scoop out the centre and discard.
  12. Remove your prawn mixture from the fridge.
  13. Spoon in your prawn mixture into the cucumber boats.
  14. Drizzle the remaining 2 tablespoons of UmamiPapi Chilli Oil onto your cucumber boats.
  15. Enjoy!
