chicken drumettes
1 knob
ginger

soy sauce

Shaoxing wine
1 tsp
sesame oil

Coca-Cola

UmamiPapi Chilli Oil

sesame seeds
1 pinch

Directions
- To prepare your chicken, remove from the fridge and let it come to room temperature.
- In a bowl, add in your soy sauce, Shaoxing wine, sesame oil, coca cola, cinnamon stick and 1 teaspoon of UmamiPapi Chilli Oil and set aside to infuse.
- Finley slice your ginger.
- Place your wok on high heat then add a generous amount of vegetable oil and let it come to a smoke point.
- Add in your chicken and ginger, we want to keep it moving to prevent the ginger from burning, cook until the chicken had browned.
- Add in your sauce mixture and bring to the boil.
- Reduce your heat to medium and cover for 10 minutes.
- After 10 minutes, remove the cover and turn your heat back to high, we want to reduce the sauce down to a thick glaze.
- Once it is reached the thick glaze consistency, turn off your heat.
- Serve your chicken drumettes in a large serving bowl.
- Sprinkle sesame seeds.
- Spoon the remaining 2 tbsp of UmamiPapi Chilli Oil.
- Roughly chop a handful of fresh coriander and sprinkle over the top.
- Garnish with salt and pepper.
