Coca-Cola Umami Chicken Drumettes

Ingredients

1kg chicken drumettes
1 knob ginger
2 tbsp soy sauce
1 tbsp Shaoxing wine
1 tsp sesame oil
300ml Coca-Cola
3 tbsp UmamiPapi Chilli Oil
1 cinnamon stick
1 handful sesame seeds
1 bunch coriander
1 handful sesame seeds
1 pinch salt
1 pinch pepper

Directions

  1. To prepare your chicken, remove from the fridge and let it come to room temperature.
  2. In a bowl, add in your soy sauce, Shaoxing wine, sesame oil, coca cola, cinnamon stick and 1 teaspoon of UmamiPapi Chilli Oil and set aside to infuse.
  3. Finley slice your ginger.
  4. Place your wok on high heat then add a generous amount of vegetable oil and let it come to a smoke point.
  5. Add in your chicken and ginger, we want to keep it moving to prevent the ginger from burning, cook until the chicken had browned.
  6. Add in your sauce mixture and bring to the boil.
  7. Reduce your heat to medium and cover for 10 minutes.
  8. After 10 minutes, remove the cover and turn your heat back to high, we want to reduce the sauce down to a thick glaze.
  9. Once it is reached the thick glaze consistency, turn off your heat.
  10. Serve your chicken drumettes in a large serving bowl.
  11. Sprinkle sesame seeds.
  12. Spoon the remaining 2 tbsp of UmamiPapi Chilli Oil.
  13. Roughly chop a handful of fresh coriander and sprinkle over the top. 
  14. Garnish with salt and pepper.
  15. Enjoy!
